Growing up, popsicles were my lifeblood during summer. I was constantly slurping up those tubed ones like they were water. Sadly, as I’ve gotten older and have started becoming more health conscious, I’ve obviously realized most of the popsicles I grew up with are a little too high in sugar (… okay, a lot…)
After lots of fun trial and error, these are my favorite healthy & refreshing popsicle recipes! They are lightly sweetened with Monk Fruit (non-sugar 0 calorie natural sweetner alternative!), but don’t worry, the flavors are so perfect that you won’t miss the extra sugar. I made these with Almond Milk but feel free to use any milk of your choosing.

Chai Teasicle
Yes, you read that correctly. Chai Tea Popsicles! Sadly my stomach can’t (literally) stomach coffee, so caffeinated tea is my morning boost, but that doesn’t mean you can’t add a little milk to make this a latte!
Good Earth Teasicle
If you haven’t had the heaven-on-earth pleasure of drinking Good Earth Tea, you have not truly lived. Their Sweet & Spicy flavor is by far my #1 favorite tea of ALL TIME. If you like sweet orange & cinnamon, this is teasicle for you! I have a total sweet tooth and this is often my post meal healthy treat. It comes in both (black tea) caffeinated and non-caffeinated versions for you to choose from.
Apple Cinnamon Refresher
This one is so simple, yet so incredibly tasty. Get yourself some Unsweetened Organic Applesauce and throw in a little cinnamon & you’ve got yourself a delicious fruity popsicle. Coming in at only 70 calories for 1/2 cup of applesauce this popsicle is the perfect healthy + refreshing summer popsicle. No need to add monk fruit to this one.
Mexican Watermelon
If you know me, you know I am obsessed with Tajin (the BEST Mexican Chilli-Lime seasoning that can literally go on anything! It’s not spicy btw, I’m a sad Mexican who can’t handle her spice). Naturally, I found a way to incorporate Tajin into my icy treats! This one also doesn’t require Monk fruit!
Horchata / Rice Pudding Popcicle
My second favorite Mexican popsicle! This rice milk, cinnamon-y treat goes perfectly as a healthy dessert alternative.
Healthy + Refreshing Summer Popsicles
Instructions
Chai Tea Popsicle
- Steep a chai tea bag in 1/4 of boiling water for 5 minutes
- Wait until tea cools
- Add cooled tea, 1/4 cup of Almond Milk, 1/8 tsp of cinnamon, 1/8 tsp of cardamom and 4 drops of Monk Fruit Sweetener to a Popsicle holder
- Freeze & Enjoy!
Good Earth Sweet + Spicy Tea Popsicle
- Steep a sweet + spicy tea bag in 1/4 of boiling water for 5 minutes
- Wait until tea cools
- Add tea to popsicle maker
- Freeze & Enjoy
Apple Cinnamon Popsicle
- Add 1/4 cup of unsweetened applesauce + 1/8 tsp of cinnamon to a popsicle maker
- Blend the two ingredients well with a spoon
- Freeze + Enjoy!
Mexican Watermelon Chilli Lime Tajin Popsicle
- Cut a hand-size slice of seedless watermelon & remove rim
- Blend the slice of watermelon in a blender or food processor
- Add blended watermelon + 1/8 tsp of Tajin to a popsicle maker
- Freeze + Enjoy!
Arroz Con Leche Popsicle
- Cook 1/4 of a cup of rice
- Wait until cooked rice is cool
- Add 1/4 cup of cooked rice, 1/2 cup of milk of choice, 1/8 tsp cinnamon, 4 drops of monk fruit sweetener, and 2 drops of Vanilla Extract to a popsicle holder
- Blend well with a spoon
- Freeze + Enjoy!
